PAMPAS RODIZIO® At PAMPAS RODIZIO® we try to combine the best of South American cuisine with European tastes and habits. Rodizio is the typically Brazilian way of cooking meat. All different kinds of meat are gently grilled above a charcoal fire so that they cook slowly and retain all their juices. This way of cooking meat was invented by South American cowboys known as gauchos. They roasted their meat on long skewers round a simple campfire. For them rodizio wasn’t just about eating, it was about spending time together relaxing and enjoying themselves after a long day working hard on the pampas, or plains, where their cattle could graze freely and where the beef that we serve (picanha) comes from.
