Hirsinger Chocolatier is a storied family‑run confectionery that has graced the heart of Arbois for over a century, beginning with Auguste Hirsinger in 1900 and continuing through four generations of chocolatiers. Known for its "Chocolats Vivants®", the shop creates chocolates without artificial preservatives or refrigeration, allowing the flavors to evolve naturally and stay fresh. The historic house doubles as a festive summer terrace—open every day from 8:30 am to 7 pm during the warm months—where visitors can sip local wines, enjoy ice creams, and sample small plates while overlooking the Jura countryside. Beneath the storefront, a modest museum invites guests to explore the history of chocolate making in the region, with displays of vintage tools, notebooks, and the handcrafted techniques that earned Hirsinger a Meilleur Ouvrier de France title and an EPV label. 360 minutes on average is enough to savor a chocolate tasting, wander through the exhibits, and relax at the terrace, but many devote up to two hours for a full experience.
