"U Vecchio", the E Caselle restaurant is, like the hotel, rooted in the territory, generous and audacious. Built mainly around the best local products, the seasonal menus are written in collaboration between our chef and the producers. The Vecchio is located in the heart of a rich region, a few kilometers from the orchards and market gardens of Aleria, the farms of central Corsica, but also the ponds where the very famous mussels and oysters of Corsica are raised. . It is quite naturally that, depending on the seasonality of all these products, they are declined according to Mediterranean recipes by our Chef, Olivier. Whether on the shaded terrace around the pool or inside around the huge "fucone" (fire place), the friendly and generous service will also offer you a list of Corsican wines, selected by the owner, author of a thesis on always surprising and increasingly recognized for its Corsican vineyard quality.
