I wanted to create in my village of Ariege a local restaurant dual vocation, taste and heritage, to show how good our products mountains are the fruit of this exceptional territory . Because I love these Pyrenean mountains, because our profession of breeder shapes for generations mountain areas, from the bottom of the Ariege valleys to peaks. And that mountain triptych, man, animal is the cornerstone of our culture, and our economy, the Pyrenean ecosystem. It offers a high food quality and environmental flavor.
