With a distinctly Provençal flair, the cuisine pays homage to local produce, all sourced from small-scale producers or indeed, from our own kitchen garden. The Var is an open-air hothouse of vibrantly coloured vegetables from plump tomatoes through to courgettes, peppers and aubergines. And from the sea, our signature dishes feature the finest fish and seafood of the Mediterranean, while from the land, Sisteron lamb, beef and pork confit take centre stage: a veritable Provençal symphony that is sure to strike a chord with your taste buds.
