At Michelin-starred restaurant Le Colombier, head chef Johan Thyriot invites you on a journey to the heart of the terroir. Inspired by the art of Kaiseki, his cuisine excels in the balance of flavors, artistic presentation and seasonality of produce. Vegetables from the kitchen garden and herbs from the permaculture herb garden, picked just before serving, are at the heart of every creation. The chef works with 50 varieties of pepper, bringing depth and complexity to each dish. Locally-produced olive oil and honey also enrich the recipes. The menu, structured around the four elements - Earth, Water, Fire and Air - immerses you in a unique and creative culinary experience.
