The homemade pasta proposed on the menu are produced right in the heart of the restaurant. Grani antichi is the secret of the pasta recipe, a unique mix of hard wheat flour, from the Antique Sicily. On the menu, try our Pasta “alla NORMA” a Sicilian culinary specialty, from the city of Catania. This pasta dish is cooked with a garlic tomato sauce with fried eggplant, salted ricotta and basil. Apparently easy to cook, meticulous method and know how make this dish unique and delightful. Nino Martoglio, writer and poet of the last centurynamed that dish from Vincenzo Bellini's famous opera, “ E una NORMA”! Francesco Lombardo’s great grandfather shared the same passion for opera and this pasta. The name of the new restaurant is paying him a rousing homage. Pastificio Norma, a family story !
