Un Jour a Peyrassol restaurant in Paris' 2nd arrondissement near the Bourse proudly wears its historic connection to the Knights Templar by the crimson crosses it displays right out front. The Peyrassol Commanderie, of which this restaurant must be its best embassy, in Provence was founded in 1256 by them and has been producing limited and lovely wines for centuries. This restaurant plays beautifully on the theme of antiquity with rough exposed stone and brick walls, vaulted rooms, barrel-staved tasting bar, rustic wood tables and chairs opposite utterly sleek acrylic seating, the walls hung with photographs of the countryside to study. The menu focusses on the food of Provence and on black truffles, in frequently-changing dishes like mache, goat cheese and truffle salad, prawns with fork-mashed potatoes, scrambled eggs with winter truffles, dark chocolate cake. Red, rose and white Peyrassol wines are on offer, and if you like the vibrant flavours you've tasted, you can buy many of the bits from the shop at the front.
