Built in the seventies by Gabriel Marguet, butcher in Villers le Lac, the « Tuyé » has been used for more than fifty years. It keeps safe a real traditional know-how. As a matter of fact, until the middle of the 20th century, in Franche-Comté, porc and beef meat was smoked to be kept. Each farm used to have a « tuyé ». It’s in a few of them, in these special chimneys, that Gaby would find a smoky room for his best pieces. Unfortunately, most of the « tuyé » have been unused because of the emergence of central heating.Gaby then had the idea to build his own « tuyé », a huge one to keep his profession showing respect for traditions. At 900 m in altitude, at the edge of the woods, the « tuyé du Papy Gaby » was built in the republic of Saugeais, a mysterious informal territory since 1947, whithout real border who claim is presidency and ministers,his anthem and his currency, his custom officer, his laissez-passer, his ceremonies.
