Edmond Besserat founded the first Maison Besserat in Aÿ in 1843. A native of Hautvillers, he built up his expertise, creating personalized cuvées and blends by accurately working on quality and striving for ever greater elegance, finesse and lightness. One day, as fate would have it, Edmond Besserat and Yvonne Méric de Bellefon, of Champagne nobility, met. In 1920, their marriage marked the beginning of the Maison Besserat de Bellefon legend. The new brand was born. In 1930, the Director of La Samaritaine de Luxe in Paris challenged Victor Besserat, 2nd of the name, to create a lightly effervescent Champagne, with a thinner mousse and a lot of finesse to accompany and pair an entire meal. To meet this demand and win his bet, Victor decided to use the Crémant production technique. Crémant des Moines, the jewel in the crown of Maison Besserat de Bellefon, was born.
