In the heart of the Charente Maritime, Saintes, a few kilometers from Pont l'Abbé d'Arnout, his hometown, Jerome decided to settle, having traveled and worked alongside Emmanuel Renaut, Anne-Sophie Pic, Carlo Crisci, great figures of gastronomy. Along the way he meets Coralie, the lilting accent of the Cévennes, which joined him. Together they create Le Dallaison, a sweet mixture of two regions, the local flavors, spicy memories of their many travels. A warm and friendly place where Jerome makes mention his instinct by combining tradition and modernity, Coralie warmly welcomes you to share their love of cooking. Combined with local producers is a gourmet and refined cuisine that is eaten. Wild plants and morning pickings Jerome come magnify fresh and seasonal market.
