All the fresh sauce recipes found at Francesca are traditional Italian and Sicilian family recipes. Francesca Albanese-Arbogast is inspired daily by a know-how transmitted from generation to generation, in particular by her grandmother, her aunt and her father, all great enthusiasts of Italian gastronomy. Francesca also conducts research to unearth forgotten recipes and bring them up to date, or to find the ingredient that will make all the difference. Each of the 19 sauce recipes offered to restaurant customers is developed and perfected directly by Francesca in her kitchen. The recipe, once finalized, still has to pass an important stage, that of tasting with family and friends, a key moment, where everyone will give their opinion, make suggestions before it is included on the menu of Francesca restaurants and goes into production.
