Brauerei Spezial, founded in 1541 and still owned by the Merz family today, is the oldest smoked‑beer brewery in Bamberg. Across its 475 years of history the out‑of‑the‑oven malt‑smoking furnace and the timber‑framed brewery building have remained largely unchanged, offering visitors a living museum of Franconian brewing craft.
