Utilising all new technology, select from over 700 wines by the glass - perfectly preserved and tempered - from any of the world's greatest regions, producers, and vintages - many from large format bottles - paired to the finest international products available; be it stinky cheeses, aged Japanese Wagyu sausage, Iberico Bellota Ham, Rillette of Pheasant, Hare, or Boar. Begin with a glass of bubbles and a Seafood specialty, from Lobster Cream with Cognac to Cedar-smoked sushi-grade white Sardine filets, olives, etc. Highlights include two signature dishes, Burgundian Oeufs en Meurette or Confit Duck Cassoulet a la Toulouse, Street Food-style Mexican Elotes as a side, and an Italian-Style tomato salad.
