To find the meaning of Umami we will go back to Japan in 1908, where Professor Kikunae Ikeda suggested Umami as a fifth flavour, beyond the four already known, namely sweet, bitter, salty and sour. In particular, umami means the existence of good and pleasant taste and delicacy and comes from the Japanese umai "wonderful" and mi "taste". Today, Umami in our restaurant means the same and much more for us.
