Paxos is exquisite, a superlative spot to simply rest, relax and recharge batteries depleted by day to day life. Yet despite its obvious natural attractions and enviable selection of private villas, this island has precious few hotels, so when the opportunity to help create one arose, we could not resist the challenge.
