The history begins in the Byzantine Empire and appears mainly in Constantinople and Thessaloniki. Starting midnight the bakers prepared in a wooden oven bread and bagels. Before dawn, the bagels were ready and the smell of roasted sesame was a temptation for those passing by. Consumer demand for different flavors brings the bagel today in different variations: stuffed with raisins, chocolate, cheese, whole grain etc., But nothing will ever taste like the simple natural bagel with sesame.
