In the regions surrounding Naples, traditional pizza artistry has practically remained unchanged since the 18th century. Margherita is the classic Neapolitan pizza, and a staff favourite here at Flatey. According to history, the first margherita was made in 1889 when baker Raffaele Esposito decorated a pizza to resemble the Italian flag in honor of queen Margherita di Savoia. He used tomatoes for red, mozzarella cheese for white and finally basil leaves for green.
