Binario 37 ….. where a Good Cuisine and a Fine Welcome are family traditions 1996 The crossing keeper box of Moccone became an important landmark for foodies and lovers of family environments, thanks to an idea of daddy Antonio. Antonio Calderaro, Tonino for his friends, has always believed in the potential and in the “great beauty” of Sila upland. He has pursued the objective to restore the characteristic Steam Locomotive, which hasn’t been in operation since 2008. Tonino hopes the Steam Locomotive will go back to puff as soon as possible, even because he is still contacted by a lot of tourists from different countries who should desire to begin this journey among Sila mountains. In 1996 Tonino convinced his wife Silvana to create a little restaurant which distinguished itself by a “good cuisine” made with fresh and natural products, cleanliness and kindness. All family has helped towards the success of this activity, everyone with their personal qualities: mum Silvana with her tasty dishes. The most famous dish is the “Tegamino Silano” with made-home pasta, fresh cheese and tomato sauce and sausage. Her politeness and kindness is noted among regular customers; dad Antonio, well-known for his culinary passion, his charm and generosity and then their three children. Giuditta and Francesca, a young lawyer the eldest and an expert on foreign languages as well as a good chef the youngest, have always supported their family in this activity. Francesco Carmine, Carmine for his friends, has decided to assume the reins of the activity, driven by his passion for cuisine and his strong management and communicative skills. Despite his youth, he has a significant experience in catering sector already. He worked in the event organization and tourist sector and he has followed different professional courses: • Seminar for pizza makers with the Professor Evandro Taddei and the Professor Alessandro Negrini; • Certificate in pizza maker at API (Association of Italian pizza places) with the famous Professor Angelo Iezzi; • Participation at the pizza world championship (Barletta 2014) where he qualified at the second position in the junior category; • Specialization in Cocktail and Speedy-working sector – course with the Professor Aldo Piromalli; • Tourist animator course with final qualification. 2014 Binario 37 has sprung up after twenty-two years. A new name, full of meanings, a new more modern and comfortable styling … but lifelong traditions, tastes and hospitality!! Innovation but always tied with the Past because ……. “If eating is a need, eating with intelligence is an Art”.
