A guided tour of the vinegar factory which takes in the entire production process of Balsamic Vinegar of Modena, both I.G.P. (P.G.I. - protected geographical indication) and D.O.P. (P.D.O. - protected designation of origin), from the pressing of our grapes to the cooking of the must, the ageing in prized wooden casks and finally the tasting of different aging and types of Balsamic Vinegars.
