In our restaurant, we prepare and cook products from our organic gardens. As for what we do not produce, we ask the help of local small producers nearby. Each product hides an interesting story to tell and represents a specificity of the territory to be safeguarded. We adopt cooking and preservation methods designed to preserve the nutritional values and the characters of each product. The off-season vegetables on the menu are the ones we have processed and stored immediately after harvesting.
