A stone's throw from the Politeama Theater, in the heart of the nightlife of Palermo, the concept of the new place of Giuseppe Costa, chef and owner of the one Michelin star restaurant "Il Bavaglino" in Terrasini (PA), is the one that brings together vast culinary offerings. Shop, bistrot, wine bar, trattoria. "Dispensa" is all that and much more. All sides of "Dispensa", however, still have one thing in common and it’s the faithful research of the best raw material as well as the attention to tradition as recovery and revival of Sicilian history and identity. The chef is Giuseppe Costa, but in “Dispensa” experimentation and reinterpretation are deliberately banned to enhance instead a return to the good and genuine traditional cuisine in a gourmet conception that now more than ever, represents quality of the raw material, knowledge of food preparation techniques, direct relationship with suppliers and producers as well as hospitality and professionalism of the service.
