QUINTOQUARTO | PIADINA, ETC. We started trying out flours, doughs and fillings from tradition to create new flavours. The idea of the setting took shape the same way: a dynamic location but with a flavour from the past, an atmosphere from our 1950s with just a hint of crossing our borders. The past reinterpreted in the concept for the location but first and foremost in the concept of piadina, our dear old “rustic bread”, which just like bread can accompany – or rather, contain – any delicious culinary invention. In effect, choosing the fillings was a piece of cake and can’t help evolving continuously because you can put (practically) anything in a piadina.
