La GLACERE – THE COMPANY A name a place “La GLACERE” is the name of a particular area in the suburb of San Daniele, called Sopracastello. In this area the ice collected from the near lake used to be stored in the ice-house so called “glacere”. Because of its particular climate characteristics it has been chosen for the production of the Prosciutto di San Daniele. The Hamfactory The hamfactory has been working since the 1950s and it can be considered one of the first hamfactories in San Daniele del Friuli. It was at first just a laboratory which was then extended and renovated many times in order to improve its production. Its main quality is certainly its position, halfway on the hill, with its rooms facing the bed of the river Tagliamento which can grant a continuous ventilation.
