After 700 years, a local ancient Castle Anguillara / Palazzo Riario, reopens its doors. Crossing arches, massive pillars, vaulted ceilings and numerous ceramic finds medieval and Renaissance, found in the deep throw, reveal the story of two important lords who possessed the castle between 1300 and 1600. And 'here that, after a long time of recovery and rehabilitation, today comes the Hostaria Rose, whose name is inspired by the coat of arms of Riario with the Golden Rose five petals, rich heraldic and symbolic meanings. Born here a typical restaurant at the foot of the Palazzo Farnese, in the historic center where you can still breathe the simple rhythms of the picturesque village, among narrow streets, squares and flowered balconies. The Hostaria della Rosa features local cuisine, including pasta made by hand, soups peasant, the latter of grilled meat, ragout, braised mushrooms, the famous sweet hazelnuts and chestnuts Cimini. The aromas and flavors of old country we are trying to procure more from local producers. The olive oil of Tuscia, chosen from the best mills, wines of the territory or of noble Italian selected for each course. Meats and cheeses refined, fresh or aged in cellars volcanic, to enrich appetizers to accompany the rich and cutting boards with exquisite sauces and bruschetta.
