Founded in 1953, Bistro Flores blends Dutch culinary tradition with modern sustainability principles. The kitchen emphasizes local, seasonal ingredients sourced from regenerative farms, and makes extensive use of fermentation to deepen flavors and extend shelf life. Signature dishes include a range of plant‑based charcuterie made with koji, as well as thoughtfully crafted 4‑, 5‑, and 6‑course menus that can be tailored to dietary preferences. Dining is complemented by a curated wine cellar of ~300 European wines, many of which are biodynamic or organic, as well as a selection of non‑alcoholic “sappen” crafted from fermented fruit, vegetables and tea.
