YŌKO is nothing more than artisanal Japanese street food. When creating our own concept of Japanese cuisine, we were guided by the principle of KODAWARI, which means striving for perfection through passion, persistence, and commitment. In line with KODAWARI, there are no shortcuts or half-measures for us. The process is what matters. We place great emphasis on natural fermentation. From miso to garum, kimchi, and even bread—we ferment everything ourselves on-site, actively participating in the entire process. Ramen, yakitori, sando, and much more. This is YŌKO.
