Small family farm dedicated to the care and grazing of the Latxa sheep, and Beekeeping. Here you can buy cheese and honey directly from the producer. We have a Cheese Factory where we make a variety of cheeses; IDIAZABAL Cheese (Protected Designation of Origin), Otzara Basket Cheese and TXURIA Fresh Cheese (cheese with the Euskolabel Quality Seal). All of them following the ancestral tradition in our family is like this, they are made with the secret recipe of the amama (grandmother), with the milk of our own flock of Latxa sheep, natural rennet and natural mineral salt from the Salinas de Añana spring. . Tiburcio's great-grandfather already made these cheeses here, in the Sierra Salvada GOROBEL and matured them in a small cave. We are in Tierra de Ayala, in Izoria, in a spectacular landscape setting. Here we live and work developing a friendly activity with the environment that surrounds us. The herd grazes all year around the farmhouse during the milking season and during the gestation period we move it to Monte Babio, which also belongs to Izoria. It is a town with a lot of history, to review the Fortified Village of Babio where a cheese from 3,000 years ago has been found! We also have beekeeping as our main activity and we obtain natural heather honey. To obtain it, we take care of five beehives in the Sierra Salvada GOROBEL, a formation that rises from the Ayala Valleys with an average drop of 600 meters. An impressive crest.
