Here, no fixed menu. concocted from fresh products, it will depend on the market, the season and the mood. That said, in Istas Zaldi – the Basque hippocampus – fish is always in the spotlight! The choice of our products and suppliers is at the heart of our business and our concerns. Their quality is our priority. The Basque Country, sea and mountain offers us excellent products. Our fish and seafood, coming from the Atlantic, are fresh and wild, our French or Spanish meats are rigorously selected and our vegetables, generally come from small local productions and organic farming.
