Estragón, a celebrated name in Ibiza’s culinary scene, recently celebrated its first Michelin Star, followed by a Green Michelin Star and two Repsol Suns. In 2025 the original kitchen closed for a comprehensive overhaul, and the restaurant will reopen in May 2026 in a new, elegant setting at the Insotel Fenicia Prestige Suites & Spa on Santa Eulália. The menu will continue to showcase Mediterranean flavors with an emphasis on creative, sustainable, and locally sourced ingredients. Chef Álvaro Sanz, together with his seasoned team of culinary partners, will craft an intimate dining experience that marries traditional elegance with groundbreaking innovation. Guests can anticipate a meticulously curated tasting menu, exceptional service, and an ambience that reflects Ibiza’s natural beauty and culinary heritage.
