INCA is the first and the oldest Peruvian gourmet restaurant in Madrid. It was founded in 1973 to offer a wide selection of Peruvian traditional food to the Spanish people. INCA restaurant started a new stage in 2004 with Irma Magalli Ferrari as head chef. Upon culinary training in Peru, Magalli introduced new traditional flavors from different regions of the Andean country, always using ingredients native to Peru. That is way INCA offers the best typical dishes from Peru in an elegant and simple atmosphere. Among their specialties, stand out Ceviche, Tiradito of red tuna fish, Chicken in yellow aji sauce, Lamb, Crème prawn soup, Staffed potatoes, and not to forget delicious handcrafted deserts like Limon pie, Passion fruit pie, Alfajor, Suspiro Limeño..
