Opened in May 2007, the Aljuzama restaurant is named after an aromatic herb traditionally used in North Africa for infusions and dishes in honor of Arab cuisine and culture. But the history of Aljuzama in Valencia dates back four years ago, when the same owners opened a namesake sandwich shop opposite the Albatros cinemas, and found that there was a demand for more elaborate dishes such as couscous or Tajin, from which they could offer a bocate'ria, so now we have a good sample of traditional Arabic cuisine.
