Bouchon is a small restaurant in Malmö where we serve food and wine with glances against Lyon and the traditional French cuisine. We cook our food from scratch with focus on traditional cooking methods. Interaction between the cook and ingredient is personal. At Bouchon we want to celebrate the traditional cuisine with roots from cooking local produce at home. We respect craftsmanship and tradition. Let the ingredients speak for themselves and let the classic dishes remain so, whilst we in true Bouchon style put a personal touch to the food and atmosphere. The backbone of the kitchen at Bouchon is an armada of dishes such as saucisson en brioche, pike quenelles with crayfish sauce, pumpkin soup, chicken liver paté, andouillette, blood sausage, escargots and vegetables according to what the season has to offer. It was, and still is important to use all parts of the animal and not only the fillet. The food is straight, simple and rustic. The menu is supplemented by food from the more Parisian Bistro, such as steak au poivre, braised rabbit, oeufs mayonnaise, foie gras, scallops à la nage and oxcheek braised in red wine.
