The desire to return to our roots was prompted by the realisation that an incredible diversity of quality produce can be sourced locally. In our regions we discovered genuine artisans, passionate about food, who sustain Switzerland's heritage and keep the fruits of the earth alive. What we propose is a multifaceted cuisine blending the traditional with the new, allowing you to discover new flavours or simply rediscover those forgotten. And we hope, by the end of your meal, to have awakened in you something of the taste of Proust's Madeleine.
