Head Chef Josh Mann delivers a three‑AA‑Rosette‑level menu crafted from fresh, locally sourced ingredients – many harvested from the hotel’s own walled garden. The dining room is split into three intimate rooms, each featuring classic country‑house décor and warm wooden paneling. In summer, the restaurant spills onto a terrace, offering alfresco dining under the Sussex sky. Guests can enjoy a relaxed lunch on Sundays from 12:30 pm to 2 pm, while weekday dinners run from 6:30 pm to 8:30 pm with last orders at 8:45 pm. Families are welcomed, and a dedicated Little Lodgers menu is available for younger guests. Table reservations are required to secure your spot, and a 50 % deposit guarantees your booking. Cancellations made 48 hours before the reservation are refunded; beyond that, the deposit is forfeited.
