Our Tuscan-born chef transforms the restaurant into a piece of Italy each morning, kneading fresh pasta by hand and baking rustic Tuscan bread daily. Our signature Carbonara has become legendary among locals—prepared the traditional Roman way with guanciale and farm-fresh eggs (never cream). Equally coveted is our hand-rolled Pici pasta, a Tuscan specialty rarely found outside Italy. Morning visitors can enjoy Italian breakfast classics while lunchtime showcases our monumental Italian sandwiches built on that same house-baked bread.
