Ramen Dayo! is Glasgow’s first authentic Japanese ramen destination, bringing high‑quality, bone‑broth‑based ramen from a small Tokyo‑style yatai cart to the heart of Glasgow. Founded in 2016 by a Glaswegian‑Tokyoite ramen chef, the restaurant has grown from a pop‑up cart into a full‑service dinner spot on Ashton Lane, offering a menu of richly flavored bowls ranging from classic tonkotsu to innovative New‑Wave varieties. All ramen is made from scratch, with a slow‑cooked pork bone broth that takes more than 50 hours to develop depth, and complemented by house‑made chashu, soy‑marinated soft‑boiled eggs, and a signature mayo‑flavoured garlic oil. Beyond ramen, the venue serves a curated selection of Japanese beers, sakes, cocktails, and desserts, allowing diners to enjoy a complete Japanese dining experience.
