I specialise in cold smoking Shetland farmed salmon and delivering tasting sessions on this process to visitors. Join me in my workshop to learn about the unique processes I use, including exploring the science of taste, smell and flavour and how I designed and built all of my own smokers. I also make the sawdust used in the smoking process myself and have developed ancient methods of slicing the fish to enhance flavour. Tasting sessions in my dedicated heated workshop space are available to book daily which includes many samples of my produce. Additional smoked salmon is also available for sale on the day, or anytime from my online shop.
