The Northern and Eastern regions have had Mogul influences over the centuries and as such Mogul Emperors encouraged and patronized the development of Mogul cuisine, music, architecture and arts. Persian charcoal-filled clay ovens cooking kebabs, pilau and biryani are typical examples.
