The PURS Hotel & Restaurant in the center of Andernach was designed by world-renowned designer and antique dealer Axel Vervoordt. Its minimalist interior creates timeless spaces with an unmistakable sense of history. The history-steeped building, originally called the Old Chancellery and built in 1677 by the Archbishop of Kur-Köln for aldermen and clerks, serves as the perfect backdrop. Chef Peter Fridén, born in South Korea, raised in a small town in Sweden and trained in French cuisine, knows and loves the typical cuisine of the three countries. The Nordic-Japanese style of cooking is a relatively new combination of Scandinavian and Japanese cuisine. Both cuisines have a strong connection to nature and use fresh, seasonal ingredients. Another common element between the two cuisines is the emphasis on the presentation and aesthetics of food. This innovative style of cooking combines the best elements from both cultures and reinterprets them in a creative way.
