Alati restaurant is located within a 400-year-old winery, the original canava that marked the beginning of Vedema, a Luxury Collection Resort. Canava, a word unique to Santorini, describes the underground cave formation once used to produce and store wine. The entire cave has been kept as it was centuries ago, completed only by candles, safeguarding a unique and timeless patina. The extraordinary experience of dining in a centuries-old winery, is met with the fascinating al fresco proposition at the restaurant’s upper terrace. Everything here is quintessentially Greek, from the restaurant’s name, Alati, which translates to salt, to the beautifully orchestrated menu, creatively celebrating the gastronomic culture of Greece.
