The Giambalvo family, Sicilian shepherds, have been producing ricotta since 1818. The tradition has been passed down through five generations to Giacomo and then to his son Giuseppe, who established the first cheese factory. Giuseppe expanded the business, becoming a leader in the industry and a Knight of Labor. Today, Giacomo, representing the seventh generation, leads the company with the intention of innovating while maintaining the family tradition. Their story is an example of passion and dedication to the cheesemaking craft.
