Our culinary proposal, curated by chef Luca, is characterized by traditional dishes and ingredients which are interpreted according to the Nordic philosophy, with its focus on spontaneous herbs and fermentations, and elaborated following ancestral techniques like our renowned ember grilling. It’s a cooking style that does not make use of shortcuts and works in direct contact with the time factor, in a way that allow us to execute as less manipulations as possible. We give a lot of importance to local ingredients and their seasonality, placing extreme attention on environmental sustainability.
