The restaurant has a long history, which began in the 50s with Franco and Filomena Pedretti with Osteria Roncole; revived in 1993 by the grandson Carduccio Pedretti (now owner with his wife Monica) with the renovation and reopening of the restaurant, proposing a cuisine based on local dishes and their exploitation. The philosophy has not changed since then, indeed, the link with the territory is even more strengthened; eg salami (salted pork, bow, shoulder, neck, salami, bacon), are all produced by dad Nereo in winter months, processed without preservatives and seasoned in the underground cellar with brick floor. We are part of the Consortium of culatello Zibello dop ; produce and stagioniamo directly culatelli we serve on the table. First Courses of fresh pasta are strictly made in our kitchen. The basic elements such as eggs, flour, and, of course, Parmigiano-Reggiano, are carefully selected. On the menu are proposed tortelli with greens parmigiana, anolini in capon broth and beef, potato ravioli with black truffles, pumpkin ravioli, medallions walnut gorgonzola, handmade tagliatelle (Strepponi), pisarei and beans, goodies grandmother's lasagna meat sauce. Main Courses prefer pork and poultry (duck fowl): Piacenza coppa baked pasta in white wine salami, roast duck, stuffed faeaona; then braised veal cheek to Gutturnio, tripe alla parmigiana; the main dish is the rabbit roast in a pan with herbs. Dishes Gluten Free; for customers with allergies prepare gluten-free: our meats are prepared and seasoned naturally without preservatives and flour and are accompanied by fried cake gluten free flour; well first, tortelli with greens parmigiana, pumpkin ravioli, tortellini nettle pisarei and beans, cappelletti in broth, garganelli salted pork are prepared with gluten-free flours. And 'Reservations required. For pizza lovers, our pizza maker Alberto (Neapolitan) prepares excellent pizza cooked in a wood oven. Every day at lunch and dinner you can choose the pizza you like (menu with about 40 pizzas, calzones and buns), eat it in the restaurant or take away. For several years we have added to the restaurant rooms where you can also sleep: L ' Hotel has 11 rooms with different types: double, twin three beds and 4 beds, our customers are tourists visiting the places of Giuseppe Verdi and Guareschi in Busseto and Brescello, but also foreign tourists who stay for any day and run on Parma, Cremona and Mantua.
