Rollo's agro enterprise is specialized in the production of extra virgin olive oil. Since 2001, the enterprise has achived The certification Dop Terra d'Otranto for its olive oil Troali. The mixrture of different olives, with preponderance of local variety are hand picked from the plant directly or by mechanical shaker and are crushed with cold extraction within 24 hours
