The rural tradition of the Selmi family has long been going since 1960, thanks to the grandfather Gino who, since he was a child, follows his parents on the farm. In the 2000s, they took possession of the farm, beginning the cycle of renewal but without ever forgetting the teachings of their grandfather. The modernization process continues until it reaches, in 2009, the achievement of the certification of Acetaia, officially making the great family tradition, the Traditional Balsamic Vinegar of Modena. The San Paolo farm does not produce only quality wine and Traditional Balsamic Vinegar of Modena. The Selmi family's passion is also dedicated to the production of typical products of the province of Modena, and known all over the world. Like the production of Saba, a typical condiment from Emilia Romagna obtained from the cooking of grape must. We also get excellent jams, always based on grapes, excellent to taste with cheese and typical Emilian products.
