Welcome to Selection The inspiration behind Selection is to bring the Norwegian culture together with the best selected Asian fusion dishes combined with our cocktails and wine. Restaurant Selection creates the Umami feeling between sour, salt, sweet, bitter and Umami. All the dishes are based on Umami taste that "spreads across the tongue, coating it". Experiments on the tongue’s areas of taste receptivity have shown that sweet and salty tastes are sensed more intensely on the tip of the tongue, while umami is sensed all across it.
